Peach Cobbler - Other

Yields 6 servings. Very good recipe!

Ingredients

2 TBLS sugar
1 C flour (sifted)
1.5 tsp baking powder
1/4 tsp salt
1/4 C butter
1/4 C milk
1 beaten egg
1 - 1/2 TBLS cornstarch
1/4 tsp cinnamon
dash nutmeg
pinch salt
1/2 Cup brown sugar
4 cups peaches (sliced)
1 TBLS lemon juice
1 TBLS butter
1/4 tsp almond flavoring

Biscuit Topper - Preparation

  1. For biscuit topper, sift together 1 cup of sifted all-purpose flour, 2 TBLS sugar, 1-1/2 tsp baking powder, 1/4 tsp salt.
  2. Cut in 1/4 cup butter till mixture resembles coarse crumbs.
  3. Combine 1/4 cup milk and 1 beaten egg and add to dry mixture. Stir just to moisten

Peaches - Preparation

  1. Combine 1-1/2 TBLS cornstarch, 1/4 to 1/2 tsp ground cinnamon, dash nutmeg, dash salt, 1/2 cup brown sugar, 1/2 cup water in saucepan.
  2. Cook and stir till thickened.
  3. Add 4 cups sliced peaches, 1 TBLS lemon juice, 1 TBLS butter. Cook till peaches are hot, (about 5 minutes).
  4. Stir in 1/4 tsp almond flavoring.
  5. Pour filling into 8-1/4 x 1-34 inch round baking dish. Immediately spoon on biscuit topper in 6 mounds.
  6. Bake at 400 degrees for 20 to 25 minutes
  7. Serve warm with cream or ice cream
